Christmas Baking
Christmas baking, envokes images of being in the kitchen with your daughters and creating all sorts of wonderful goodies for all to enjoy. My problem happens to be that I did not have any daughters. Don't get me wrong, I love my sons. I am truly queen bee in my domain but getting them to help out in the kitchen is almost impossible unless it involves a grill and a large chunk of beef. I have managed to pursuade my guys to help with a little baking.
1 cup butter
1/2 cup sugar
1 egg
1tsp vanilla extract
2,1/4 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup raspberry jam
Take out of the oven and put the raspberry jam down the middle, then back in the oven for 10-15 min.
Okay so I didn't have much luck, but once I promised my oldest son he could wear the apron it seemed to cheer him up a bit.
All kidding aside I did make several of my families favorites but their all time favorite is the Raspberry Ribbon Shortbread .
Rasperry Ribbons (From Tast of Home magazine)1 cup butter
1/2 cup sugar
1 egg
1tsp vanilla extract
2,1/4 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup raspberry jam
In the mixing bowl cream the butter and sugar
add the egg ( I always beat my egg first) and the vanilla
add the combined flour, baking powder, and salt
I always let the dough chill for about 20 min.
Shape into 4 2in. by 10 in. logs and add a depression in the middle and place into a 350 degree oven for 10 min.
Slice and drizzle a mixture of 1 cup confectioners' sugar, 2 TBS evaporated milk and 1/2 tsp vanilla extract.
