Back In The Fresh Pasta Making Business

Thanks to my wonderful husband, I now have to ability to make fresh pasta again.  Let me explain.  I had bought a pasta maker that attaches to the Kitchen Aid mixer about a year ago.  Anyone who has made this investment can agree that it is not a cheap accessory so I was particularly thrilled to have it.  Apparently these little devices are much more complicated than they originally appear.  It would seem now to pay very close attention to the directions that they come with and read them thoroughly.  Let me show you what I mean.
A simple enough instruction, however, if you don't follow the directions.......


This is the result.......So I broke my machine and had to resort to boxed pasta, that was until this Christmas when my wonderful husband surprised me with a new one.  So to show him my appreciation I made him a meal I saw on the Food Network show Guy's Big Bite.  It was a Roasted Red Pepper Ravioli with a Chardonnay Cream Sauce.  Divine...Simply Divine!


First you must roast two red pepper...Any recipe that begins with roasting peppers is going to turn out good.

Pulse them in the food processor with egg and olive oil.


I used Semolina flour for this recipe.  Usually I will make a basic egg pasta, but I found for this dish the Semolina flour made it more delicate and since this is accompanied with a very light sauce I chose to use this flour instead.


After mixing allow the dough to rest for 30 minutes.


Aaahh here is my new machine working her magic.  There simply is nothing that can compare to fresh pasta.


Add the five cheese mixture...then...



Top it with the other layer.

Then drop into a boiling pot of salted water for 2-3 minutes.  Why do my hands look so old in pictures?



Top with the Chardonnay Cream Sauce and some Italian Parsley and be prepared not for dinner but for a dining experience!

Oh my goodness that looked so delicious!!! The post was great...I've never seen pasta made before! I've said it before, but that is so NOT your hand!! ha ha
